What does “organic coffee” mean?

This is coffee from Mt. Whitney Coffee Roasters. It gives out a rich dark and nutty flavor with a hint of lemon. As weird as that might sound for those who haven’t tried it yet it is a surprisingly good blend.
It is wet processed, grown at 1400 meters in the mountains that makes the growing process slower so the plant can process all of that flavor much better. It’s USDA certified organic coffee so you don’t have to worry about the chemicals and such.

Just like the fine things in life, coffee beans grown in different regions have specific flavors and characteristics associated with their origin, that’s why some coffee aficionados prefer to have their coffee from a single-origin because it adds to the taste and overall flavor of a cup of coffee.
The methodologies and techniques that these countries use is also a factor that affects the overall end product, this includes the cultivation of the crop, the growing methods –whether its sun grown or shade grown- and the processing. All of these little details are what makes a bag of beans “special” in its own way.
Species and variety of coffee
Something that is usually overlooked but is an essential step to picking your perfect brew is knowing the type of species it is. Usually as long as it’s Arabica beans people would automatically think that it’s all that they need since most high quality coffee companies use Arabica but there are actually 2 kinds of bean trees which is essential to add to the overall taste of the product namely, these are:
- Robusta (Coffea Canephora) – They have a high yield, are usually pest resistant and grow well in warm, low altitude environments.
- Arabica (Coffee Arabica) – They are very fragile and is susceptible to diseases, they require a high altitude and cold climate and yield less per harvest. This is the reason why Arabica is more expensive that Robusta and is only used for the top quality of beans, although there is nothing wrong with indulging in Robusta trees as they offer quality taste in the right hands and costs much less.
In the brew, Robusta produces more body and more cream than Arabica beans but has a very crude flavor which does not go down very smoothly, you can taste this in your usual Nescafe coffee cup. Robustas is primarily used to produce commercial and readily available coffee due to its high yield production and low costs of upkeep.
Arabica on the other hand are generally finer types of beans. Most A grade coffee companies only roasts Arabica like the companies that we listed earlier.
The harvest method is important to the quality of the beans when they reach your cup. Beans are harvested once per year, usually over a 2-3 month period. There are 4 main harvesting methods:
1.) Stripping method- This is done by hand by hand removing all the parts, including the flowers and is usually manually done. It produces poor results because of the mixing of the good cherries with the damaged and the poor one, because of this there is no consistency in every bag of beans.
2.) Brushing the trees- This method uses a type of comb to remove only the ripe cherries from the tree. This is only used in specialized farms which have low yield per season and is usually rare in terms of numbers because it is a time consuming process that can take some time before finishing an entire batch.
3.) Mechanical harvesting- Either a machine, a truck, or some sort of vibrator that is fixed to the tree is used to automatically loosen the ripe cherries making it a faster process to finish an entire batch.
But however good this might sound there is a bit of a downside to the producers as it might damage the tree and might damage the future crop in the process as it rips off the unripe cherries, damages the flowers and the leaves as well.
4.) Hand picking- This is the most exclusive method of all as hand picking has to be done manually for all of the crops in hectares of land that usually spans horizons but this usually produces a higher quality of beans since the farmers can see the ripe bean from the unripe one, not damage the leaves, the cherries, the flowers, and the leaves in the process. This has to be done until all of the cherries in the season are harvested.
The higher quality beans are usually picked in the slower methods as they result in higher quality beans that are manually selected.
Not all packaging is the same. Coffee sold in a vacuum-sealed pack that enables air to escape (but not enter) will taste fresh. Some beans in an old wet sack most likely will not. The most authentic packaging isn’t this dramatic, but it definitely affect the quality of your coffee.
While sealing the flavor is the priority, sustainability should also play a huge role in choosing the right espresso bean.
Keep things like these in mind if you’re seeking for the greatest espresso coffee beans. A fine mix of coffee might be ruined before it even reaches your house due to poor packaging. You should seek for coffee packing that will keep the coffee fresh. Apply the same requirements to the packing that you would to the storage of your own coffee.

Why is my espresso too acidic?

But what does it mean for a coffee to be “acidic”? Is it important in coffee? If it’s bad then why not just take it away entirely?
Well, acid can greatly affect the taste and aroma of the coffee, a copper can taste the acidity of a cup of coffee by the sharpness of the coffee leaves in one’s mouth but it is the fact that acid is a chemical that affects it in the sense of taste. This just proves that coffee-making is part science, part art, and understanding this can help coffee makers to get the best possible flavors.
Acidity in itself can make or break a coffee, it can add to its aroma or make it smell like rotten flesh, it can make it taste like heaven or taste like sewer water, it is an important step to the brewing process and anyone who is looking to make coffee making their profession should learn it because although it might sound hard –chemistry is one of the hardest sciences out there- it will benefit you in the long run.
Roasting a coffee for a longer period of time causes more decomposition of the beneficial chlorogenic acids that give lighter roasts their acidity. An espresso roast will be less acidic than a light or medium roast.
Under-extraction and Over-extraction
A sour espresso shot is one that has been under-extracted, which means that the water has been rushed through the coffee and has not extracted the great taste oils. You’re either not putting enough coffee in your basket, or you’re tamping too lightly, resulting in gritty coffee.
Over-extraction causes the coffee to become overcooked, releasing undesirable flavors; it becomes harsh, bitter, and burnt.
One of the most prevalent causes of sour espresso is that it was pulled at a very low temperature. Pulling a shot at a low temperature results in under extraction since the cold water molecules aren’t active enough to complete the extraction. As a result, you get a sour and acidic taste.

So should you buy whole beans or ground coffee? The answer is simple, whole beans! Why? Well it’s because it’s more flavorful and produces that “fresh” quality that everyone wants in their cup.
