Coffee brewing is not magic; it is chemistry. “Extraction” is the process of water dissolving flavor compounds from coffee grounds. These compounds do not dissolve all at once. They dissolve in a specific order:

1. Acids (Salts & Fruits): Dissolve first. If you stop here, the coffee is Sour.
2. Sugars (Caramel & Chocolate): Dissolve second. This is the “Sweet Spot.”
3. Plant Fibers (Tannins & Ash): Dissolve last. If you go this far, the coffee becomes Bitter.

How to Use: The Tasting Protocol

Using this tool effectively requires a consistent tasting workflow. Follow these five steps for every brew:

Step 1: Brew a Control Standard
Do not change your recipe yet. Brew with your standard ratio (e.g., 1:16 for drip, 1:2 for espresso) and aim for a standard time.

Step 2: Temperature Check
Let the coffee cool slightly. Human taste buds cannot accurately detect flavor nuances above 140°F (60°C). Wait until it is comfortable to sip.

Step 3: Identify the Primary Defect
Ask yourself: “What is the *worst* thing about this cup?” Is it the sharp bite (Sour)? The drying sensation (Bitter)? Or the lack of flavor (Watery)? Focus on the negative to find the fix.

Extended Flavor Glossary

Term Definition Sensory Clue
Acidity The brightness or “sparkle” of the coffee. Desirable in moderation. Lemon, Berry, Green Apple notes.
Body (Mouthfeel) The physical weight or texture on your tongue. Ranges from Skim Milk (thin) to Heavy Cream (thick).
Channeling When water finds a path of least resistance (a hole) in the coffee bed. Tastes both Sour AND Bitter simultaneously.
TDS Total Dissolved Solids. The concentration or “strength” of the coffee. High TDS = Intense/Muddy. Low TDS = Watery.

How do I use the Flavor Compass? +

My coffee tastes both sour AND bitter. What gives? +
This is called Channeling. The water found a “shortcut” through the coffee bed. Some grounds were over-extracted (bitter) and some were barely touched (sour). Fix this by improving your puck prep (distribution) rather than changing grind size.
Does water temperature really matter? +
Yes! Lighter roasts are denser and harder to extract—they need hotter water (205°F+). Darker roasts are brittle and extract easily—they need cooler water (195°F) to prevent burning and ashiness.
I changed the grind size, but now the brew time is wrong. What do I do? +
This is normal! Grind size and brew time are linked. If you grind finer to fix sourness, the water will flow slower, increasing brew time. This is actually good—both the finer surface area AND the longer contact time work together to increase extraction. Don’t worry if the time changes, trust the flavor.
What role does “Agitation” (stirring) play? +
Agitation adds energy to the brew, increasing extraction. If your pour-over is stalling and tasting bitter, try pouring more gently. If your French Press is sour, try stirring it vigorously right after adding water to ensure all grounds are wet immediately.
Does the age of the beans affect flavor mapping? +
Yes. Old beans (1+ months past roast) lose their volatile aromatics (acidity/fruit) and “degas” less. They often taste flat or woody regardless of how perfectly you dial them in. Ensure your beans are fresh (2-4 weeks post-roast) for the best results with this tool.
What if I can’t change my water temperature? +
If you have a basic kettle that boils to 212°F (100°C), you can manage temperature by waiting.
